Why does the audio or mic sensitivity revert to default on Bosch cameras connected to Milestone VMS?

If this configuration was done on the camera and not in the VMS, the behavior you're experiencing is as expected when Bosch cameras are connected to a Video Management System (VMS) like Milestone. In this setup, the management server periodically pushes configuration settings, including time settings, to the cameras via the ONVIF protocol. This can result in changes you make, such as adjusting the audio/mic sensitivity, being overwritten.
